I joked elsewhere that if I could bake cookies for every pinch-hitter, I would. But since I can't here's a recipe instead! It's very simple, but the cookies are amazing.

"Wilhelmiina" cookies

Ingredients:
  • 200 g butter
  • 2 dl sugar
  • 1 egg yolk
  • 2 tbsp. molasses
  • 3 tsp. vanilla sugar
  • 5 dl flour
  • 2 tsp. baking soda (sodium bicarbonate)
Preheat the oven to 175°C.

Cream the butter and sugar with a hand mixer until light and fluffy. (Use a larger bowl than the black one in the picture or you will curse yourself and your ancestors.)

Mix all the dry ingredients together in a separate bowl.

Add the egg yolk, molasses and dry ingredients to the butter-sugar mix and stir until everything is combined.
 
 

 
 
Line two baking trays with baking paper. Shape the dough into six sticks that are roughly 2 cm thick (that would make three sticks per tray). Bake in the oven for 15 minutes, then immediately cut them into pieces. The traditional way is to cut them diagonally, so they form a kind of diamond shape.
 
 

 
(Yeah I was lazy and made only two sticks, and the finished cookies are too... long? But I'm a writer, not a baker!! I'm sure you will do a better job.)


Let them cool (LET THEM COOL, I know you want to eat them immediately but have some patience!!!) completely, then store them in airtight boxes. Or, notice that you don't have any boxes and regrettably your only option is to eat them all immediately. Alas.
